So, me and the other lead cook gave our job an ultimatum tonight. They could either fire one dude, who we've had problems with, or we were both putting in our two weeks.
To preface, Wednesday night he was working with me and another guy. We got slammed, were pulling 40 minute ticket times (I like to have it done in 15...), and the kitchen was generally in the weeds all night.
Thursday, it was just me and the guy from Wednesday. One of our managers came down just to call orders and plate the food, so we were essentially working with only 2 people. Not a single ticket over 25 minutes, and only a couple were over 20. We did $100 less in sales, so essentially it was just as busy. Not ONCE did anyone feel like we were in the weeds or behind on anything, and we were making batches of stuff in the middle of dinner.
Tonight, we worked again. It was me and a different cook. Only one or two long tickets (25-30 minutes), because we basically kicked the guy we want fired off the line and had him just giving us plates and making salads. When he was one the line, it slowed everything down.

His last day is Tuesday. Also, some of the bull our kitchen manager has been pulling will be dealt with.

My job is to be an asshole. I excel at the position.

I do the same "FILTERED" at my job. I got a few co-workers coming up on retirement that half-ass or don't do their jobs. I just send them on "FILTERED" errands to get them out of the way. I'd rather handle 250+ per meal myself than have to babysit them and handle the line.

I'm over about 10 guys, half are Mexican, and pretty much do what they are told and do it well, but the others are highschool drop outs, and aren't worth a flying crap. They also have authority issues since I'm only 22, and frankly don't get visibly mad very easily....but it's whatever.

But this is construction not food industry...

I'm glad I work where I only have 5 coworkers, and since we all work outside on various parts of the estate....I never actually see them for more than 10-15 minutes combined each day

This is what i see in your post ^^^^. If you are the boss, do you have the ability to hire and fire ? If so, then don't even bother with any confrontation, just meet with them either individually or as a group and fire them on the spot. It is EASY to hire the uneducated, and there are plenty of them out there. Ask your 5 good employees if they can recommend any one they know that would like to work for you and it makes your job of hiring new help tons easier, and since they would have helped recommend the new hires, they feel as though they are getting a hand in the decision, they help to make the new help understand the job, and they help to keep them working as a good employee ...

win win

you get rid of your problem children, and your productivity increases, your employees are happier and they buy in better to your requests, plus now you are seen as the boss who will make things happen

right now, even your good employees will view you as weak and unable to make a decision. everyone loses.

I can't fire, and I have talked to my boss about it a bunch, he says we have to hold onto them until he can fill their positions, blah blah blah, my hands are more or less tied.

Hahaha, I knew our owner wouldn't man up and deal with the guy.

Useless employee is still on the schedule for this week, and our Kitchen Managers BS has only been 'taken note of'.
Our owner is the most Beta-Male, socially awkward and timid person I know that isn't still in school. I'm pretty sure he's afraid of me ever since I punched a solid dent in a door after getting pissed off about repeated screw ups from the front of house.

On the plus side, Saturday when our Kitchen Manager got sent home/quit (then un-quit a few hours later), I took over the kitchen and except for the useless guys station, everything ran smooth. And even his went alright since I was constantly telling him when and what exactly to do. He was getting mad because he's 27 or 28 and I'm 23. He didn't like me "Barking orders at him". I told him if he can ever prove that he can do his job to me, I'd stop. He couldn't. But now the owner and the GM know that I can handle the kitchen.
