The main problem with the standard tension catipult ("mangonel" if i'm not mistaken) is that the initial trajectory is horizontal. From there, your projectile can only go downward. With a trebuchet, you get more of a flinging action, much like that of a person throwing a ball. The projectile moves at an upward angle and the shots are arked. This effect is magnified by the use of a sling instead of a cup on the end of the arm.
A fun use for this mortar-like trajectory is, of course, a form of easy to operate paintball artillery. You can either throw individual grenades or, with a litttle enginuity, grapeshot.
I could rant on about this for hours but its late. Perhaps I can provide some more in-depth commentary tomarrow.
