Pardon my newbness but I have a question regarding these two markers. What would have a higher ROF, a stock A5/X7 with a mechanical trigger or the A5/X7 with an E-grip set to semi-auto mode?

Well, in both cases your your rate of fire is however fast you pull the trigger. In that sense, an e-grip on semi-auto is just like the mechanical trigger.
Keep in mind though, that the e-grip will drastically shorten and lighten your trigger pull, so you should be able to rip on it a lot more - especially if you have a double trigger on there at the same time.
